Preparation
Put the beef between 2 waxed papers and flatten with a meat grinder until thin.
Dry the meat with paper towels and lightly pat with flour.
Heat the olive oil in a skillet over medium heat. When it is very hot, add the calves and brown on both sides. Remove from heat and keep warm in two dishes.
Add the lemon juice, the chicken stock, the white wine and the chopped parsley to the pan, mix well.
Return the milanesas to the pan, season with salt and pepper and cook until the sauce has thickened. Serve with the sauce over the milanesas.
