Preparation
Brown the meat in a quick pot-type casserole with a little oil and lightly salted.
Once browned on the outside add a little water (like half a glass) and white wine (another half glass).
We add the branch of fresh rosemary, cover the pot and close under pressure.
When the pot is placed in maximum cooking, then we count 40 minutes.
We let the pot lose pressure and once we can open it, we take out the veal, checking that it is tender, filleting it, pouring the sauce and ligating it with a bit of corn starch.
Accompanied with a garnish of cooked vegetables.
