Ingredients

4 portions
  • 5 tablespoons cornstarch, for the scab
  • 4 tablespoons flour, for the scab
  • 7 tablespoons ground bread, for the scab
  • to taste salt, for the scab
  • to taste black pepper, for the scab
  • 6 eggs, for the scab
  • 1.5 kilos chicken wing
  • 2 tablespoons butter, for the sauce
  • 2 tablespoons dried chili, for the sauce
  • 1 1/2 cups tamarind concentrate, for the sauce
  • 1/2 cups orange juice, for the sauce
  • 1 1/2 cups apple vinegar, for the sauce
  • 15 milliliters lemon juice, for the sauce

Preparation

Preheat the oven to 200 ° C.
Clean the chicken wings and in a bowl, mix with the egg.
Add the cornstarch, wheat flour, bread crumbs, salt and pepper, mix.
In a baking dish, arrange the chicken wings one by one and bake for 30 minutes or until they form a golden and crispy crust.
In a blender glass add butter, dried chile de arbol, tamarind concentrate, orange juice, apple cider vinegar, lemon juice and blend.
In a refractory, arrange the wings already with a first cooking, add the tamarind sauce and return to the oven for 10 to 15 more minutes.
To finish on an extended plate, arrange the chicken wings with a little ground chile de arbol.

PRESENTATION

On an extended plate accompanied by a cheese dip.

If you want them to be very crispy, do not cover them.
