Yellow Rice with Chicken

If you are looking for a practical and satisfying dish, prepare this delicious yellow rice with chicken that is cooked in the same pan, making the chicken very juicy and a rice that is unrivaled. It has vegetables such as peppers, carrots, peas and chicken pieces of your choice. It is ideal for any day of the week.

Ingredients

4 servings
  • 3 spoonfuls of olive oil
  • 1 piece of whole chicken skinless, cut into pieces
  • to taste of Salt
  • to taste of black pepper
  • 1/4 of Cup of onion filleted
  • 1 tablespoon of garlic finely chopped
  • 2 cups of rice for paella
  • 1 piece of Red bell pepper cut in julienne
  • 1 piece of carrot in small cubes
  • 1 piece of tomato poached and chopped
  • 1 on of seasoning for paella
  • 3 1/2 cups of Water
  • 1 Cup of pea
  • to taste of parsley to decorate

    Preparation

    In a pot, heat the olive oil and seal the pieces of chicken on both sides until it looks golden, season with salt and pepper. Remove and set aside.
    In the same pan, cook the onion until it is transparent, add the garlic and the rice, fry until browned. Add the pepper, carrot and cook for 5 minutes.
    Add the tomato and cook for 1 minute, add the paella seasoning, pour the water and add the peas. Bring to a boil and return the pieces of chicken to the pan, cover and cook over low heat for 30 minutes or until the rice and chicken are cooked, stirring halfway through cooking.
    When done, remove from cooking and let stand 15 minutes. Serve and garnish with fresh parsley.

    PRESENTATION

    Serve a chicken breast, rice and garnish with parsley.

    TIPS

    To make it a little more gourmet add a cup of white wine, it will look and taste spectacular.
