Mega Tuna Empanadas

This recipe is inspired by traditional Mexican food and everything that has to do with nixtamlizada corn flour, I am fond of making combinations with it and that is how you discover these delicious empanadas, and in the student life, you have to elaborate quick things and of low budget this fell to me like finger ring.

4 portions
  • 1 cup cornmeal, nixtamalized
  • 2 cans tuna, with vegetables
  • 350 grams panela cheese
  • Oil Oleic®, necessary amount
  • salt, to taste
  • 1/2 lettuce, chopped
  • 1 cucumber
  • 11/2 cups Water
  • 1 Avocado from Mexico
  • sour cream
  • 1 plastic bag


Mix the flour with the water in a bowl. In this step it is important to add the water little by little until a manageable mixture is seen, without being too watery or dry. Until all the flour is dissolved.
To add the panela cheese to crumble with the hands around 120 g, this goes to the taste of each one, if it prefers it can not include it. And add salt to taste tasting the dough until it has the salty flavor you prefer
Take the transparent bag and cut it from the lateral edges (Because in them we will crush the dough).
Take the prepared dough and go making balls the size of our two hands together. Place them inside the plastic bag and go crushing to spread the dough evenly, leaving a thickness of around 3 or 4 millimeters, forming a circle of the size of a cake plate.
Now with our flat-shaped dough lift one side of the bag and place half a can of tuna with vegetables and fold in half to form a pie.
Place in Oleic oil and fry over medium heat.
Chop the lettuce and tomato enough to accompany the empanadas.


Place the pie on a plate and put the lettuce and cucumber with crumbled panela cheese to taste, add avocado and place the sour cream.


You can add another type of ingredients to accompany the salad, such as carrot, tomato etc.
