Yucatecan Stuffed Turkey Salbutes from Turkey

I saw this recipe from relatives of my grandmother who live in Kanasin. It is simply delicious thanks to the golden of the salbutes and the spicy of the black message which is the star of this dish. Here in Mérida it is very common to have this dish on Sundays or on special occasions accompanied by fresh orange water from the town. What I like about this dish is its versatility since it is typical here to eat it in food, tacos, salbutes and cakes. I hope you like it! Greetings.

Ingredients

5 portions
  • 100 grams red achiote paste, black
  • 1/2 kilos Turkey
  • 1/2 kilos ground pork
  • 1 tomato, big roast
  • 1 onion, big roasted
  • 1 garlic, roast
  • 5 eggs, parboiled and peeled
  • 1 habanero pepper, chopped
  • 1/2 kilos corn dough
  • 1 cup Oil Oleic®
  • salt, to taste
  • 100 grams flour

Preparation

Cook the turkey seasoning to taste, separate the pieces and continue boiling the broth adding the black message moving until dissolved completely. * Reserve a pinch of black message for step two *
Slice the pinch of errand and mix it perfectly with the ground meat forming medium-sized meatballs by placing a whole parboiled egg in the center. Add them to the boiling broth, remove until cooked and set aside.
Add the roasted tomato, onion and garlic to the broth. Place the turkey pieces in the broth for last boiling. Reserve the broth in one bowl and the pieces of meat in another.
Mix the flour perfectly and salt to the corn dough and make small balls.
With the help of a clean plastic bag, make two squares (which will help the dough not stick in the tortilla making machine) and place a small ball of dough between the two nylons forming the tortilla. Repeat this step until the dough is finished, reserve them on a clean cloth napkin.
Put the oleic oil in a pan and wait until it is hot. Begin to fry the tortillas until they are golden brown. Remove them and drain the excess oil.
Crumble the turkey meat and cut the meat balls into thin slices. Arrange it on the salbute (fried omelette). Finally and to accompany, decorate with the stuffing broth.

PRESENTATION

The presentation may vary according to the taste of the guests, may be in tacos, food, salbutes or cakes.

TIPS

* The meat can be chicken instead of turkey. * Serve with habanero chile, chopped with sour orange juice. * To give a thicker consistency to the broth, dilute two tablespoons of flour in a little water and add to the broth when it is boiling and not stop moving until you get the desired consistency.
