In these national holidays it takes advantage of preparing the traditional pozole jaliciense that is delicious. This popular broth made from a mixture of chilies, corn and pork will be the star dish of the night. Accompany it with onion, lettuce, radish, oregano and corn toast with cream.

Ingredients

8 servings
  • 4 cups of cacahuazintle corn precooked
  • 1 piece of garlic medium head
  • 1/2 piece of onion
  • 2 spoonfuls of Salt
  • 500 grams of pork meat solid
  • 2 pieces of pig trotters
  • 2 spoonfuls of lard for the sauce, divided
  • 5 pieces of Chile de árbol pepper deveined for sauce
  • 5 pieces of pasilla chili pepper deveined for sauce
  • 5 pieces of ancho chili pepper
  • 2 spoonfuls of Salt
  • 1 piece of lettuce finely chopped to accompany
  • 4 pieces of onion finely chopped, to accompany
  • 20 pieces of radish
  • 2 spoonfuls of ground oregano To accompany
  • 8 pieces of green lemon
  • 8 pieces of fried or toasted corn tortilla
  • 1/2 Cup of sour cream

    Preparation

    In a pot with water over high heat, boil the corn with the garlic, onion and salt the meat and the hands. Cook until the meat is soft and the grain bursts. Around 1 hour.
    For the sauce, fry the chilies with a spoonful of butter until they release the aroma. Soak them in hot water for 15 minutes until they are soft, and blend with a little of the soaking liquid until you get a homogeneous sauce.
    In a pot, heat the rest of the butter over medium heat and fry the sauce for 5 minutes. Add half of the sauce to the corn and meat mixture, let it boil and cook over low heat for 20 more minutes. Season with salt.
    Serve the pozole and serve with lettuce, onion, radish, oregano, lemon, toast with cream and the rest of the sauce.
