Preparation
Crumble the chorizo. Heat a frying pan and place the chorizo to cook in its own oil.
Remove the chorizo once cooked and in the same pan put onion, chopped carrot, olive oil and bay leaf. Season to taste. Add the chopped tomato when all this golden brown.
We cook the pasta in salted water.
We are controlling the sauce and stirring. When the tomato has reduced and is a little thicker, lower the heat to a minimum and add the previously cooked chorizo.
We cook the pasta until we strain it. We put it on the plates and add 3-4 tablespoons of bolognesa on each mound of spaghetti.
Serve hot.
