Preheat the oven to 200 ° C.
Boil the water in a pot over high heat and cook the coditos with a little salt until they are cooked. Drain and reserve.
For the sauce, blend the garlic with the white onion, the evaporated milk, the half cream and the cream cheese.
Heat a pot over medium heat with the butter, fry the onion and garlic, pour the sauce, cook until it reaches boiling point, and add the cheeses to melt, add the cubitos and ham cubes. Cook 5 minutes without whipping the coditos.
Pour the previous preparation in a refractory oven and cover with manchego cheese, bake for 10 minutes or until the manchego cheese gratin. Remove from the oven serving a portion, garnish with fresh parsley and enjoy.
