Ingredients

4 servings
  • 3 cups of bow tie pasta
  • 1 1/2 cups of cucumber peeled and cut into cubes
  • 3/4 of cup of feta cheese in cubes
  • 1/4 of cup of red onion chopped
  • 1/4 of cup of black olives slices
  • 1/4 of teaspoon of black pepper freshly ground
  • 12 tomatoes cut in half
  • 1 cup of arugula baby
  • 1/4 of cup of lemon juice
  • 2 tablespoons of olive oil
  • 1 teaspoon of Dried oregano
  • 1/4 of teaspoon of black pepper
  • 1/8 of teaspoon of salt

Preparation

Cook the pasta according to the instructions on the package. When this list, go through a colander and put under cold water. Rinse and reserve in a deep bowl.
Add the cucumbers, onion, black olives, feta cheese, tomatoes and arugula to the pasta and stir. Season with 1/4 teaspoon of pepper.
To prepare the dressing, mix the lemon juice with the olive oil, oregano, 1/4 teaspoon of pepper and 1/8 teaspoon of salt. Stir well.
Add the dressing to the pasta salad with the vegetables and cheese and stir.
Let cool a few minutes in the refrigerator and serve it very cold.
