Ingredients

  • 10 ounces fettuccine type pasta, type ribbons

  • salt, freshly ground
  • black pepper, freshly ground

Preparation

First of all, put the butter, juice and lemon zest in a large skillet over the medium to high heat. Once the butter has melted, let it boil for half a minute. Add evaporated milk. Season with salt and pepper and cook, stirring frequently, until the milk has been reduced by half. Meanwhile, put a pan of water to boil over high heat. When it boils, add the salt and the pasta stirring it well.
Now, when it is cooked al dente, drain and transfer to the pan. Mix well with the sauce and add the grated cheese. Serve immediately.
