Chef Azari presents an exquisite recipe for Dry Noodles with Chipotle and Cumin, it is a preparation based on the traditional Mexican recipe, only with the inclusion of cumin, which gives it a spectacular flavor.

Ingredients

4 portions
  • 180 grams noodle pasta
  • 5 tomatoes
  • 1 clove garlic
  • 1/2 onions
  • 1 tablespoon ground cumin
  • 5 tablespoons vegetal oil
  • 1 chipotle peppers in adobo sauce
  • 100 milliliters sour cream
  • 20 grams Cotija cheese
  • 1 tablespoon parsley, chopped
  • 1 avocado

Preparation

The noodles are fried in vegetable oil until they take a golden color, taking care not to burn them, once golden they are reserved on absorbent paper to remove the excess oil.
To prepare the sauce, fry the tomato, onion and garlic clove, all cut into quarters or medium wedges. While the noodle is frying, sprinkle with cumin.
A smoked chipotle is added to the sauce. When the preparation has taken on a slightly golden color, it is removed from the heat and liquefied.
Once the sauce is blended, it is heated over medium heat and the fried noodle is added. Cook until sauce is reduced.

PRESENTATION

To serve, mount a portion of noodle on a plate, garnish with cream and cheese, a pinch of parsley and avocado squares.

TIPS

Optionally you can add edible flowers as decoration.
