Delicious green pasta covered with a poblano chile sauce. With this sauce we turn the classic Italian pasta into a Mexican touch.

Ingredients

4 servings
  • 250 grams of spaghetti
  • 4 poblano peppers medium
  • 1 Cup of sour cream
  • 1 Cube of garlic
  • 1 tablespoon of Butter

Preparation

Roast the chiles.
Remove the skin and seeds.
Grind the peppers, the cream, the garlic cube in the blender, adding salt and pepper to taste.
In parallel you can cook the pasta adding salt, a small spoonful of oil and two bay leaves.
In a pot, melt a tablespoon of butter, then pour the poblano sauce and when it begins to bubble, pour the pasta and mix for a minute.

PRESENTATION

Serve immediately with parmesan cheese on top.

TIPS

If the sauce is too thick it can be corrected with water or milk. You can use bouillon in powder instead of salt. To lower the hotness of the chile you can pass them through water before grinding. If you want more creaminess you can add two tablespoons of cream.
