Preparation
Cook the pasta in enough water, once it boils, count 15 minutes. Remove from the water and reserve.
Melt the butter and add the flour immediately.
Move with balloon whisk to form a pasty.
Add the milk little by little and do not stop beating.
Season with nutmeg, white pepper and salt.
Reduce until lightly thickened.
To finish, put a layer of pasta, béchamel or white sauce, shrimp and Gruyere cheese.
Repeat the previous step, until you have used all the pasta, finish with gruyere cheese.
Bake at 180º C for 15 minutes. The refracatario must be covered with aluminum foil.
Remove the foil, return the pan to the oven to cook for 5 more minutes.
