Manchego Cheese and Pumpkin Lasagna

Rich and healthy lasagna with pumpkin slices filled with beef, vegetables and traditional Prego® sauce. Gratinated with Manchego cheese, is the most nutritious option to eat this delicious version of Italian dish.

Ingredients

5 portions
  • 2 tablespoons olive oil
  • 1 clove garlic, finely chopped
  • 1/2 onions, finely chopped
  • 2 carrots, finely chopped
  • 1 branch celery, finely chopped
  • 1 cup leek, finely chopped
  • 1 pinch oregano
  • 1 jar Prego® Traditional Sauce, 680 g
  • 1 pinch salt
  • 1 pinch black pepper
  • 6 zucchini, cut lengthwise in sheets of ½ cm
  • 3 cups manchego cheese, grated

Preparation

Preheat the oven to 180 ° C.
Heat the olive oil in a skillet over medium heat, cook the garlic and onion for 1 minute. Add the carrot, celery, pore, oregano, Traditional Prego® sauce and cook for 5 minutes. Season and reserve.
In a greased lasagna container, add a layer of pumpkin slices, a layer of stuffing and a layer of cheese, until the container is full. Ends with pumpkin and Manchego cheese.
Gratin in the oven for 10 minutes or until the cheese is melted and the pumpkins are soft.

PRESENTATION

Serve a piece of perfectly cut lasagna so that the layers are visible.

TIPS

To make it more light you can use panela cheese or another cheese of your preference.
