This recipe for mac and cheese (coditos con queso pasta) is an innovation of the classic recipe. In this it is prepared with 3 types of cheeses, essence of truffle, bacon and echallots.

Ingredients

6 servings
  • 3 spoonfuls of coarse salt
  • 225 grams of elbow macaroni pasta
  • 1 tablespoon of truffle oil
  • 2 spoonfuls of shallot
  • 85 grams of smoked bacon smoked, finely chopped
  • 1 tablespoon of garlic
  • 2 spoonfuls of flour
  • 1 1/2 cups of whipping cream
  • 1 tablespoon of basil
  • 1/4 of teaspoonful of coarse salt
  • 1/8 of teaspoonful of black pepper
  • 2 cups of cheddar cheese extra strong, grated
  • 1 Cup of Gruyere cheese grated
  • 1 Cup of cheddar cheese white, grated
  • 1/2 Cup of nut
  • 2 spoonfuls of ground bread ideally from the Japanese called Panko

    Preparation

    Preheat the oven to 180 ° C
    Put the pasta to cook as indicated in the package but remove from the water when it is a little hard (it will continue cooking in the oven).
    Mix the already dry pasta with the truffle oil and reserve.
    Mix the echallots, bacon, garlic and olive oil in a pot and cook for 10 minutes over low heat. Add the flour and raise the heat to medium. Cook for 2 minutes, moving constantly. Add the cream and wait for it to boil. Let it thicken for 10 minutes over low heat.
    Add herbs, salt and pepper. Add the 2 cups of strong chedar and gruyere cheese. Stir until it is a smooth mixture.
    Add the pasta to the cheese mixture and stir to mix everything.
    Divide between 6 souffle cups and sprinkle with the white chedar cheese, the ground bread and the chopped nuts on top.
    Bake for 10-15 minutes until the cheese is bubbling and it is a little golden brown on top.

    PRESENTATION

    It is served in individual souffle cups.

    TIPS

    If you are going to prepare it for children you can omit the truffle oil and if you do not have all 3 types of cheese you can use only one.
