Ingredients

6 portions
  • 500 grams elbow pasta , From Luigi
  • 6 sticks surimi
  • 1 cup peanut, toasted
  • 1/2 red onions
  • 1/2 jicama
  • 1 french lettuce
  • 2 bunches spinach
  • 3 slices Pineapple in syrup
  • 6 tablespoons soy sauce
  • 1/2 cups olive oil
  • 1 orange, the juice
  • salt
  • black pepper

Preparation

File the onion, peel and reduce the jicama in cubes. Wash the lettuce, spinach and cut the pineapple into squares.
Fry the onion in half the oil and briefly slice the surimi.
Add the pineapple and the jicama and continue frying for 2/3 minutes, salt and pepper and turn off.
Add to the previous sofrito the roasted peanuts.
Cook the pasta according to the package instructions.
Mix the pasta with the surimi seasoning and the rest of the oil.
Place the lettuce and spinach on the plates as a base and add the pasta.
Serve warm.
