The homemade pasta is very simple to prepare and has a fresh and delicious flavor. The pasta only carries egg and flour and there are some recipes that also add olive oil.

Preparation
Add flour and egg to a food processor until the texture is earthy (a kind of balls).
Transfer the dough to a clean surface and knead until smooth and silky. This can take up to 10 minutes, you will require strength in the arms to achieve a good texture.
Cover the dough with plastic and let it rest for at least 30 minutes before using.
Take only 1/4 of the dough (keep the rest of the dough in the meantime so it does not dry) and with your hands start to flatten. Knead and form a square.
To make the dough: Pass the square of dough by the pasta machine in the number 0. The dough is folded in half and is passed again to number 0. Repeat this step 5 times.
Now pass the square of mass 1 time for each number of the pasta machine until you reach number 8 (depending on how thick the pasta is wanted).
Finally add more flour so that the paste does not stick and pass the dough back through the required cutter.
Let the pasta dry at least 30 minutes before cooking.
Remember that being a fresh pasta requires less cooking time. I recommend adding it in boiling water for 5 minutes, being careful not to beat.
