Pasta with Peach Sauce and Chipotle

Ingredients

4 portions
  • 1 can peach in syrup
  • 1 dry chile de árbol pepper, seedless and soaked in hot water
  • 1 package fusilli pasta, cooked and drained
  • 1/4 cups toasted sesame seeds
  • 1/2 cups cream, to taste
  • salt, and pepper to taste

Preparation

For the sauce, blend half of the peaches with chili, cream and sesame seeds. Add water and oil to make the mixture more liquid.
Heat the sauce over low heat for 5 minutes or until it thickens a little, moving constantly so it does not stick.
Dip the pasta with the sauce and add with the sesame and the rest of the peaches in syrup.

PRESENTATION

Garnish with basil leaves.

TIPS

You can add a little of the peach syrup in the sauce to achieve a sweetness effect to the recipe.
