A tasty pasta dish accompanied by sliced mushrooms and a mild sauce created with four cheeses. Ideal to accompany with bread. It's great.

Preparation
The first thing we have to do to prepare the pasta to the four cheeses, is to cook the pasta, in a large saucepan, with plenty of water, a little salt and a few drops of olive oil.
Let the pasta cook, as long as the manufacturer indicates in the package, usually oscillate between 8 or 10 minutes. While the pasta cooks, we will wash the mushrooms and cut into thin slices.
After washing the mushrooms, we will put them in a pan with a little butter, to fry them a bit. After a couple of minutes, add the liquid cream to cook. When the cream begins to bubble, it will be time to add the cheeses: roquefort cheese, emmental cheese and cheddar cheese. Lower the intensity of the fire and let it melt until a thick sauce is obtained.
When the pasta is cooked, drain it well and put it on the plate where we will serve the pasta to the four cheeses. Add the sauce of four cheeses and mushrooms, on top and stir so that all the pasta is impregnated.
To give the final touch to our pasta dish with the four cheeses, we will sprinkle some grated Parmesan cheese over it, put it in the oven for 5 or 10 minutes, at 210ºC, to gratinate.
