Ingredients

4 portions
  • 1 cup red onion, chopped
  • 1 tablespoon garlic, finely chopped
  • 4 tablespoons olive oil
  • 1/2 green bell peppers, diced
  • 1/2 red peppers, diced
  • 1/2 yellow bell peppers, diced
  • 1/2 orange bell peppers, diced
  • 1 package pasta, smooth pen (200 gr)
  • 1/3 sticks butter
  • 1/2 kilos medium shrimp, without shell (calculating seven or eight per person)
  • 1 pumpkin, criolla in squares
  • 1 pumpkin, Mini Black zucchini diced
  • 1 tablespoon basil, fresh well minced
  • 1 teaspoon lemon peel, (grated)
  • 3 tablespoons cream
  • 2 tablespoons dressing, ranch
  • 50 grams almond, toasted fillet
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper

Preparation

Put on a medium heat a saucepan and add two tablespoons of oil, then put the onion and garlic for two minutes, add the peppers, stir well and fry for a minute more, cover the pan and let cook for 8 minutes or until onion and peppers are tender. It is stirred occasionally.
The Penne or Penne Pasta is cooked in a large pot with enough water and a little salt, according to the package instructions. Drain and reserve 1/4 cup of water from the cooking of the pasta. In that liquid, butter, cream, ranch dressing, salt and pepper are added and stored.
The shrimp are removed the shell and the black of the loin making a cut all along but without detaching (butterfly cut). Meanwhile in a saucepan heat the 2 tablespoons of remaining oil over medium heat and when hot add the shrimp and cook for 2 minutes, then add the criollo squash and zucchini squash and stir left cooking until the shrimp this rose. When it is removed from the heat, add the lemon streak and the basil spoon and stir well.
In a deep bowl put the pasta, the stew of peppers, the shrimp with the pumpkin and the prepared liquid referred to in point two and stir very well in an enveloping form so that the vegetables are not mistreated.
Serve a generous portion on a plate and garnish with toasted almonds and a fresh sprig of basil. ....... And now, to enjoy this delicious Pasta with Pepper, Pumpkin and Shrimp .......
