Preparation
In a pot add salt water until it boils. (the water must taste like seawater) Cook the pasta as the package says.
In a hot pan add a drizzle of olive oil, butter, garlic and nutmeg. When the butter melts add the spinach and let it cook for 5 minutes. Season with salt and pepper and try.
Add the cream, the mascarpone. Let this be reduced, season and try again.
Pass the spaghetti through a colander and reserve a bit of the water where it was cooked and add it to the spinach sauce, add enough water so that it is a soft and not so thick sauce. Add the parmesan and mix everything together.
