Preparation
Cook the pasta in boiling water with salt and a little oil.
Grill the poblano peppers, place in a plastic bag for 10 minutes, clean and blend with the cream.
Drain the pasta and stop cooking with a little cold water.
In a saucepan melt the butter over medium heat and fry the garlic with the onion until transparent.
Add the cream mixture, season with the broth and add the pasta. Mix and heat for 5 minutes.
Decorate with cotija cheese.
