Ingredients

6 portions
  • 500 grams spaghetti, # 5 of Luigi High Protein
  • 2 cups fresh coriander, washing (green ingredients)
  • 1/2 cups pinion, whites (green ingredients)
  • 1/2 cloves garlic, (green ingredients)
  • 1 tablespoon parmesan cheese, grated (green ingredients)
  • olive oils, to taste (green ingredients)
  • salt, (green ingredients)
  • 250 milliliters milk cream, (green ingredients)
  • 2 tablespoons butter, (green ingredients)
  • milks, the necessary (green ingredients)
  • curds, (green ingredients)
  • nutmegs, (green ingredients)
  • black pepper, (green ingredients)
  • 1 cup tomtato, crushed canned (red ingredients)
  • 1/2 onions, chopped (red ingredients)
  • 2 tablespoons olive oil, (red ingredients)
  • chile de árbol peppers, chopped to taste (red ingredients)

Preparation

Green Sauce: Mix all the ingredients in a blender until a homogeneous paste is obtained, add olive oil until obtaining the desired texture. Reservation.
White sauce: In a pan melt the butter over medium heat, add the cream until a smooth sauce. You can lighten the sauce with a splash of milk until you get the desired softness. Add nutmeg, salt and pepper. Reservation.
Red Sauce: In a pan fry the onion and the crushed tomatoes in the olive oil. Add the chopped tree chili, cover and let the flavors mix for a few minutes. Reservation.
Assembly: Once the three sauces are ready, divide the pasta into three equal portions. The first portion is mixed with the pesto, the second with the white sauce and the third with the red sauce; to the second add a spoonful of cottage cheese and sprinkle with ground black pepper. Serves in platón starting with green, then white and finally red. Serves hot

TIPS

The tomatoes you use can be fresh and chopped.
