Preparation
Seal the needles in olive oil until browned. Remove and reserve.
In the same pan where you cut the needles, sauté the onion and parsley over low heat until the onion is browned.
Deglaze the pan with 1/2 cup of the beef broth and add the red wine.
Peel the tomatoes, remove the seeds and pass them through a sieve. Add them to the stew. Simmer for an hour, adding a little broth from time to time.
Cook the pasta according to package instructions.
Mix the pasta with the sauce. Salt and pepper to taste.
Serve the needles and place the already salted pasta on top. Serves hot
