This recipe for spaghetti with mussels is prepared quickly with fresh tomatoes, garlic and parsley. You can add a little peppercorn or if you like it spicy.

Preparation
Wash the mussels, remove the barabas and rinse with cold water.
Put the mussels in a large pot or pan and cook covered over medium high heat until they open.
Remove the mussels from their shells. Cut the largest mussels into pieces. Pass the excess liquid of the pan through a strainer and put in a bowl, reserve.
In the same pan, add the oil and garlic, a pinch of salt and the tomatoes. Cook for 20 minutes or until reduced a little. Add the liquid from the mussels, the mussels and the parsley. Stir and season with salt and pepper.
Cook the pasta according to package instructions in boiling water with plenty of salt.
Add the pasta to the prepared mussels sauce. Serve hot with freshly ground pepper.
