Enjoy three different sauces in the same pasta, with this recipe of tricolor spaghetti au gratin in refractory. With this recipe you will learn how to make white sauce, red tomato sauce and green parsley sauce from scratch, for any pasta, in addition to giving you the option of covering it with aluminum to gratin it on the stove.

Ingredients

8 portions

  • 500 grams Spaghetti
  • 3 tablespoons butter, for the white sauce
  • 1 cup cream, for the white sauce
  • 1 cup evaporated milk, for the white sauce
  • 1 tablespoon garlic powder, for the white sauce
  • to taste salt, for the white sauce
  • to taste black pepper, for the white sauce
  • 2 tablespoons butter, for green sauce
  • 1/4 onions, for green sauce
  • 1 clove garlic, for green sauce
  • 1 bunch parsley, for green sauce
  • 1 cup cream, for green sauce
  • to taste salt, for green sauce
  • to taste black pepper, for green sauce
  • enough Water, for green sauce
  • 2 tablespoons butter, for red sauce
  • 1/4 onions, for red sauce
  • 1 clove garlic, for red sauce
  • 5 tomatoes, for red sauce
  • 1 cup cream, for red sauce
  • to taste salt, for red sauce
  • to taste black pepper, for red sauce
  • enough Water, for red sauce
  • enough parmesan cheese

Preparation

To cook the pasta, heat enough salt water in a pot until it boils and cook the pasta for 10 minutes (until al dente). Reservation.
For the white sauce, heat the butter in a skillet over medium heat and add the cream, milk and garlic powder; Season with salt and pepper. Cook for 8 minutes, until thick, and add a third of the spaghetti you cooked; mix and reserve.
For the green sauce, blend the onion, garlic, parsley, cream, salt and pepper; in a pan with butter, cook the sauce for 5 minutes, until it thickens, add a third of the spaghetti you cooked; mix and reserve.
For the red sauce, blend the onion, garlic, tomato, cream, salt and pepper; in a pan with butter, cook the sauce for 5 minutes, until it thickens, add a third of the spaghetti you cook; mix and reserve.
For the refractory, arrange the 3 portions of colored spaghetti, cover with Parmesan cheese, then with aluminum and bake to heat for approximately 20 minutes.
Present the refractory on the table and serve to taste.

PRESENTATION

It is presented in the refractory and decorated with Parmesan cheese.

TIPS

When reheating it, do it with a little liquid (water, white wine, broth), so that it does not dry out in the oven.
