This recipe is a great vegetarian dish of pasta shells stuffed with a mixture of ricotta cheese dipped in arrabbiata sauce.

Ingredients

8 servings
  • 1 box of pasta shells big
  • 2 spoonfuls of olive oil
  • 160 grams of bacon Italian cut into cubes
  • 2 teaspoons of guajillo chili flakes
  • 2 cloves of garlic chopped
  • 5 cups of marinara sauce
  • 850 grams of ricotta cheese
  • 1 1/3 cups of Parmesan cheese grated
  • 4 egg yolks
  • 3 spoonfuls of parsley minced
  • 3 spoonfuls of basil
  • 1 teaspoonful of mint chopped
  • 1 1/2 teaspoons of Salt
  • 1/2 teaspoonful of black pepper
  • 1 Cup of mozzarella cheese grated

    Preparation

    Grease a baking dish and reserve.
    Cook the pasta shells in boiling water with salt for 4-6 minutes. They must remain a little hard as they finish cooking in the oven.
    Remove the pasta shells from the water with a spoon with holes and drain them.
    Heat the oil in a saucepan over medium heat. Add the bacon and sauté until golden, about 5 minutes.
    Add the dry chili powder, the garlic and cook another minute until it is soft.
    Add the marinara sauce and stir over low heat.
    In a bowl, mix the ricotta cheese, parmesan, egg yolks, basil, parsley, mint, salt and pepper. Reserve.
    Preheat the oven to 350 F, 180 C.
    Put a cup of sauce on the greased platon where the pasta shells are going to be baked.
    Fill the pasta shells with the ricotta cheese mixture and put on the sauce (about 2 tablespoons of cheese in each shell).
    Bat the shells with the leftover sauce and sprinkle with mozarella cheese.
    Bake about 25-30 minutes until the cheese is browned on top.
