Ingredients

4 servings
  • 4 cups of Water
  • 1 tablespoon of Salt
  • 2 cups of quinoa rinsed
  • 1 piece of broccoli bleached
  • 1 bunch of asparagus in pieces, bleached
  • 2 cups of red grapes
  • 1 Cup of cranberry
  • 1 Cup of caramelized walnut in pieces
  • 1 Cup of Oli Oil from Nutrioli ® for the vinaigrette
  • 2 cloves of garlic finely chopped, for the vinaigrette
  • 1 1/2 cups of lemon juice for the vinaigrette
  • 3 spoonfuls of orange juice for the vinaigrette
  • 1 teaspoonful of Salt for the vinaigrette
  • 1/2 teaspoonful of black pepper for the vinaigrette

    Preparation

    In a saucepan over medium heat, boil the water with the salt and add the quinoa. Lower the heat and cook covered 20 minutes. Chill
    In a bowl, mix quinoa with broccoli, asparagus, grapes, cranberries and walnuts.
    For the vinaigrette, mash the garlic with the Nutrioli® Oli Oil. Add the juices, salt and pepper and emulsify with the oil.
    Serve the salad with the vinaigrette.

    PRESENTATION

    Serve with the vinaigrette.

    TIPS

    Rinse quinoa thoroughly before use to remove saponin.
