Try this delicious mandarin, carrot, spinach salad; The special thing about this salad is that it has a sweet touch with the piloncillo and the crispy and different flavor of the peanuts with cocoa. Prepare it you will love it.

Ingredients

4 servings
  • 20 grams of spinach
  • 10 grams of lettuce
  • 1 piece of carrot grated
  • 2 pieces of tangerine in segments
  • 5 grams of peanut or peanut
  • 1 tablespoon of cocoa
  • 5 grams of sunflower seed
  • 1 tablespoon of flaxseed
  • 1 tablespoon of sesame seed or sesame
  • 1 tablespoon of piloncillo or panela
  • 3 spoonfuls of olive oil for the vinaigrette
  • 1 tablespoon of balsamic vinegar for the vinaigrette
  • 1 teaspoonful of cocoa for the vinaigrette
  • 3 spoonfuls of jam of carrot, for the vinaigrette

    Preparation

    In a saucepan mix the peanuts, cocoa, panela and add a little water until it caramelizes over low heat.
    For the vinaigrette mix all the ingredients in a bowl and reserve.
    For the salad add in a bowl the lettuce, spinach and carrot. Add the flaxseed and sesame, then pour the vinaigrette and top with the chocolate-brown peanuts with the tangerines.
