Ingredients

4 portions
  • 20 grams spinach
  • 10 grams lettuce
  • 1 carrot, grated
  • 2 tangerines, in segments
  • 5 grams peanut, or peanut
  • 1 tablespoon cocoa
  • 5 grams sunflower seed
  • 1 tablespoon flaxseed
  • 1 tablespoon sesame seed, or sesame
  • 1 tablespoon piloncillo, or panela
  • 3 tablespoons olive oil, for the vinaigrette
  • 1 tablespoon balsamic vinegar, for the vinaigrette
  • 1 teaspoon cocoa, for the vinaigrette
  • 3 tablespoons jam, of carrot, for the vinaigrette

Preparation

In a saucepan mix the peanuts, cocoa, panela and add a little water until it caramelizes over low heat.
For the vinaigrette mix all the ingredients in a bowl and reserve.
For the salad add in a bowl the lettuce, spinach and carrot. Add the flaxseed and sesame, then pour the vinaigrette and top with the chocolate-brown peanuts with the tangerines.

PRESENTATION

Garnish with peanuts and mandarin segments.
