Ingredients

4 portions
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 chayote squash, peeled and cut into strips 1 centimeter thick
  • 1/2 tablespoons table salt
  • to taste ground black pepper
  • 1/2 teaspoons sugar, white
  • 1/4 teaspoons Chile de árbol pepper, crushed
  • 1 tablespoon red wine vinegar

Preparation

Heat the olive oil in a medium skillet over medium-high heat.
When the oil is hot, add the chayote and season with salt, pepper, sugar and dried chili.
Stir and cook 2 to 3 minutes.
Add the vinegar to the stew and cook for 2 to 3 minutes more, until the chayote looks slightly withered, but still firm.
Rectify the seasoning and, if necessary, add more salt or sugar.
