This rich chicken salad has celery, walnuts, and grapes in a very good mayonnaise dressing. It is ideal for a light dinner, a school lunch or even a sandwich.

Ingredients

10 servings
  • 4 cups of chicken shredded or cut into cubes (previously cooked)
  • 1 Cup of nut Toasted and chopped
  • 1 Cup of celery cut into slices
  • 2 spoonfuls of shallot finely chopped
  • 2 cups of green grapes without seeds cut in half
  • 3/4 of Cup of light mayonnaise
  • 3 spoonfuls of vinegar
  • 2 spoonfuls of fresh tarragon chopped
  • 1/2 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper

    Preparation

    Stir mayonnaise with vinegar, tarragon, salt and pepper. Test and correct the salt if necessary.
    Mix chicken, nuts, grapes, echallots, and celery.
    Add the mayonnaise dressing and stir.

    TIPS

    This chicken salad also tastes rich in sandwich or for a school lunch.

    Yo cuando no consigo el echalot, si utilizo la cebolla y el ajo para condimentar los diversos platillos o ensaladas que preparo, y el sabor no cambia mucho, ya que precisamente el echalot es una combinación de ajo y cebolla que utilizan los agricultores para su siembra y cosecha. Aquí en la Zona Norte de Veracruz, México se cosecha entre los meses de marzo y mayo y muchos la confunden con la cebolla morada.
