Ingredients

6 portions
  • 2 cups parmesan cheese, grated
  • 2 egg yolks, for the dressing
  • 1 clove garlic, finely chopped, for dressing
  • 2 anchovy, for the dressing
  • 2 tablespoons Dijon mustard, for the dressing
  • 1/2 cups lemon juice, for the dressing
  • 1/2 teaspoons salt, for the dressing
  • 1/4 teaspoons white pepper, for the dressing
  • 1 cup olive oil, for the dressing
  • 1/2 chicken breasts, boneless
  • to taste salt and pepper
  • 1 tablespoon oil
  • 1 Rosetta Eva® lettuce
  • 1 cup crouton

Preparation

Preheat the oven to 200 ° C.
For the baskets, in a tray with non-stick paper, add parmesan cheese in a circular shape, bake for 10 minutes. Remove from the oven, lift the parmesan crust and place it on top of a mold so that it is shaped like a basket. Let cool and reserve.
For the dressing, with the help of a fork mix the yolks with garlic and anchovies, trying to crush the anchovies as much as possible to obtain a puree. Add the mustard, the lemon juice and season. Pour the olive oil in the form of thread, emulsify very well and reserve.
For the chicken, pepper the breast and cook in a grill pan with oil over medium heat, until it is cooked and has the classic marks of the grill. Cut into cubes and reserve.
In a bowl, mix the Rosetta Eve® Lettuce with the chicken cubes and the dressing. Serve in the baskets of parmesan and decorate with croutons.
