It is a light appetizer prepared with tomato, avocado, carrot, yellow pepper, radish accompanied by a rich dressing of balsamic vinegar, lemon and olive oil. Easy to prepare and very lucidora. Do not hesitate to prepare it for your next meal.

Ingredients

4 portions
  • 2 tomatoes
  • 1 carrot
  • 1 avocado
  • 1 yellow bell pepper
  • 3 spring onions, with stem
  • 5 radishes
  • 3 branches parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon balsamic vinegar
  • 4 tablespoons olive oil
  • to taste black pepper
  • to taste salt

Preparation

Boil 1/2 liter of water, put the tomatoes for 30 seconds and remove them. Peel them, remove the seeds and cut into squares. Peel the carrot. Remove the seeds of the pepper. Cut into small squares all vegetables.
Reserve some branches of parsley to decorate and the rest to chop it.
In a salad bowl mix the lemon juice, salt, pepper and olive oil.
Add the chopped vegetables to the salad bowl and mix well. Put salt, pepper and try it.
Fill 4 ramekin molds with the vegetables by pressing a little and unmold them in the dish where they are going to serve, sprinkle chopped parsley, decorate with sprig of parsley and droplets of balsamic vinegar.
I can do them in advance and keep in the refrigerator.
