  • 2 cucumbers
  • 2 pumpkins, italian
  • 3 tablespoons lemon juice, for the vinaigrette
  • 1 clove garlic, for the vinaigrette
  • 2 tablespoons fresh coriander, for the vinaigrette
  • 1 serrano pepper, for the vinaigrette
  • enough tomato sauce, for the vinaigrette
  • enough black pepper, for the vinaigrette
  • 1/4 cups olive oil, for the vinaigrette
  • 1 cup arugula, to serve
  • 4 tablespoons parmesan cheese, grated, to serve
  • 1 tablespoon yellow lemon zest, to serve


With a very sharp knife, cut the cucumber and zucchini into very thin slices. Set aside.
For the vinaigrette, liquefy the lemon juice with the garlic, the cilantro, the chile serrano, the salt and the pepper. While still liquefying, add olive oil in slow strain until emulsified.
Arrange slices of cucumber on a platter alternating with zucchini. In the center place some arugula, Parmesan cheese and lemon zest. Garnish with the vinaigrette and enjoy.


Serve the vegetables alternately in a round platter, place some arugula and Parmesan cheese in the center and season with the vinaigrette.


If you do not like raw zucchini, you can cook 3 minutes in boiling salted water. Then submerge in water with ice so that they are bright and stop cooking.
