Preparation
Wash the lettuce and disinfect it. Drains the water very well.
Arrange the leaves on a large plate as a bed to present the avocados.
Cut the avocados in half, crosswise and remove the bone.
Cut the salmon, chopped into small squares.
Make a sauce by melting the butter over a very soft heat so it does not burn. Let it cool a bit and reserve.
In another bowl stir egg yolks, lemon juice and heat in a bain-marie. Season this mixture and let it thicken, while still moving.
Pour the butter little by little, without stopping to beat, over the mixture of the egg yolks.
Use a little to stir the smoked salmon. What about you put it in a sauce boat.
Fill the avocados with the salmon and arrange them on the lettuce dish. Garnish with the lemon slices.
