Avocado Stuffed with Smoked Salmon

Ingredients

6 portions
  • 3 avocados
  • 200 grams smoked salmon
  • 6 leaves lettuce
  • 6 slices lemon, very thin
  • 200 grams butter
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • salt, and pepper

Preparation

Wash the lettuce and disinfect it. Drain the water very well.
Arrange the leaves on a large plate as a bed to present the avocados.
Cut the avocados in half, crosswise and remove the pit.
Cut the salmon, chopped into small squares.
Make a sauce by melting the butter over a very low heat so it doesn't burn. Let it cool down a bit and reserve.
In another container, stir the egg yolks, lemon juice and heat in a double boiler. Season this mixture and let it thicken, without stopping moving.
Pour the butter little by little, continuing to beat, over the egg yolk mixture.
Use a little to stir the smoked salmon. What you have to spare, put it in a sauce boat.
Fill the avocados with the salmon and arrange them on the lettuce plate. Garnish with the lemon wedges.
