If you love salads but do not know how to accompany them, try this idea of mix of almonds with croutons and herbs, to take the boring thing out of the classic salad. Prepare it and have it ready for your next meals, you only need a jar or container to properly store this delight.

Ingredients

6 portions
  • 1 baguette bread
  • 2 tablespoons olive oil, for the croutons
  • 1 tablespoon paprika, for the croutons
  • 3 teaspoons garlic, finely chopped, for the croutons
  • to taste salt, for the croutons
  • 1/2 cups cranberry
  • 1/2 cups pumpkin seed, sunflower
  • 1/2 cups amaranth
  • 2 cups almond, whole with shell
  • 1 tablespoon parsley, dry
  • 2 tablespoons ancho chili pepper, without tail or seeds, ground in a blender to make a powder
  • 1 tablespoon honey

Preparation

Preheat the oven to 180 ° C.
For the croutons, cut the baguette bread into small squares on a board.
Place the bread cubes on a tray and spread over the entire surface, pour in olive oil and sprinkle with the paprika, minced garlic and enough salt. Bake at 180 ° C for 10 minutes or until they are sufficiently golden, try to move from time to time with a wooden shovel, so that the browning is uniform. Reserve until use.
In a bowl, mix the blueberries with the sunflower seed, amaranth and almonds. Add the dried parsley, the ancho chili powder and the honey, integrate.
Place the previous mixture on a tray with waxed paper, spreading over the entire surface, bake at 180 ° C for 10 minutes or until the almonds are sufficiently toasted. Remember to move from time to time with a wooden shovel so that the toasting is uniform. Remove from the oven.
Mix the croutons with the toasted almonds in a bowl. Enjoy with your salads. Remember that you can keep this mixture in a tightly closed glass jar.

Perfect to accompany salads.

TIPS

You can use any other bread to make your croutons, you can also substitute corn tortilla, pita bread or nopal tortilla.
