This recipe is a refreshing and healthy dish, which serves as an outline for a balanced lunch, or alone for a substantial dinner. You decide at what time of day or for what occasion to prepare it.

Ingredients

7 portions
  • 200 grams broccoli
  • 2 kilos potato
  • 1 tablespoon salt
  • 2 cups greek yogurt
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon mustard
  • 1/2 teaspoons salt
  • to taste ground pepper
  • 300 grams parmesan cheese

Preparation

Boil, in a large pot, 10 cups of water with a tablespoon of salt. Carefully wash the broccoli and separate it into segments or small trees. Add water with ice; when cooled, drain them in a colander and reserve.
Wash the potatoes, put them in a pot and cover them with water. Bring to medium heat until cooked. Remove them from the water and, when they are at room temperature, remove the skin and cut them into cubes.
For the dressing, mix in a small bowl the yogurt, cheese, ½ cup of salt, mustard, olive oil and lemon, stir well.
In a bowl or salad bowl mix the potatoes and broccoli already cooked and drained, add the dressing and mix evenly. And it's ready to serve!

PRESENTATION

Decorate your plate with a few leaves of coriander or to give more color, you can add red paprika in julienne.

Accompany with bread.
