Ingredients

4 portions
  • 2 pounds red potato, clean
  • 1/4 cups pitted kalamata olive, and cut into slices
  • 1/2 cups celery, cut into cubes
  • 2 tablespoons dehydrated tomato, chopped
  • 1/2 cups Yoghurt Greek Style FAGE® Total 0%, (for dressing)
  • 1/4 cups mayonnaise, (for dressing)
  • 4 teaspoons Dijon mustard, (for dressing)
  • 2 tablespoons fresh scallion, finely chopped (for dressing)
  • 1/2 teaspoons sugar, (for dressing)
  • 1/2 teaspoons salt, (for dressing)
  • 1/4 teaspoons black pepper

Preparation

Place the potatoes in a large pot with cold water and salt. Cover and boil over low heat. When the water starts to boil, remove from the heat and continue cooking slowly until the potatoes can be easily pierced with a fork. The time will vary depending on the size of the potatoes. Start checking the potatoes after 5 minutes when the water starts to boil.
When the potatoes are cooked, drain carefully and cover with cold water to stop cooking. When they are cold, place in the refrigerator for at least 1 hour.
Place the ingredients of the dressing in a bowl and beat to mix.
Cut the cold potatoes in half or in quarters (depending on the size). Add the rest of the salad ingredients and the dressing. Stir gently to mix. Serve cold.
