Ingredients

6 portions
  • 3 red potatoes, medium peeled
  • 1 carrot, medium, peeled and cut into three parts
  • 2 eggs
  • 2 cups pea
  • 1/2 cups olive, cut in half
  • 3 spring onions, with the green and white chopped part
  • 2 tablespoons parsley
  • 4 tablespoons mayonnaise
  • salt
  • black pepper

Preparation

Put the potatoes, carrots and eggs in a large pot filled with water. Wait for it to boil and let it cook for 10 minutes before peeling the eggs. Put them under cold water to prevent them from continuing to cook.
When the carrot is soft, about 2 minutes later, remove from the water. When the potatoes are ready, about 5 minutes later, take out. Add the peas to the boiling water and cook for 2 to 3 minutes. Drain the pea of ​​the water.
Chop the egg, the potatoes, and the carrots in cubes. Add the pea, the olives, the chopped onion and the parsley. Wrap in mayonnaise and season with salt and pepper. Leave in the refrigerator until it is ready to serve.

TIPS

For a better flavor, refrigerate one night before serving.
