A rich arugula salad, cherry tomatoes, parmesan cheese and grilled chicken with a lemon dressing, olive oil, salt and pepper.

Ingredients

2 portions
  • 2 chicken milanesa (breaded) , or flattened chicken breast
  • 4 cups arugula, disinfected
  • 1 cup cherry tomato
  • 4 tablespoons parmesan cheese, grated
  • 2 lemons, its juice
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Preparation

Season the chicken breasts with salt and pepper and heat a grill.
Cook the breasts for 5 minutes on each side or until the chicken is well cooked. Remove from heat and cut into strips.
Prepare the dressing by mixing the lemon juice, olive oil and adding salt and pepper to taste.
In a deep bowl, mix the lettuce with half of the dressing. Arrange the lettuce in two plates.
Cut the cherry tomatoes in half and place around the lettuce.
Place chicken on strips and Parmesan cheese on the lettuce bed.
Spoon the rest of the dressing over the two plates and serve.

PRESENTATION

You can place the parmesan cheese in slices instead of grated.

TIPS

You can also add sliced ​​mushrooms to the salad.
