Couscous is a round grain, similar to rice, that has a light and delicious flavor. In this recipe it is served cold and with chopped vegetables. You can add chopped shrimp and it is exquisite.

Ingredients

6 portions
  • 1 3/4 cups couscous, (of which it is cooked in 5 min)
  • 2 cups cherry tomato, cut in half
  • 2 yellow bell peppers, cut into squares
  • 1 clove garlic, finely chopped
  • 250 grams shrimp, Cooked (optional)
  • 2 lemons, its juice
  • 2/3 cups olive oil
  • 3 tablespoons fresh coriander, or finely chopped mint
  • to taste black pepper

Preparation

Cook the cous cous as indicated by the package, letting it rest in boiling water for 20 minutes and fluffing the cous cous with a fork when it is ready.
While cooking the cous cous, cut the tomatoes and peppers. Garlic finely chop and cut the shrimp into pieces.
Prepare the dressing: stir the lemon juice with the garlic, salt, pepper and salt. Add the oil little by little, stirring with a balloon whisk to thicken it. Add the finely chopped cilantro (or mint) to the dressing.
Stir the cous cous (already cooked) with the shrimp and chopped vegetables and add the dressing.
Keep refrigerated until served.
