Ingredients

6 portions
  • 2 cups tangerine, in segments
  • 8 tablespoons olive oil
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 6 tablespoons red wine vinegar
  • 1/4 cups orange juice
  • 4 tablespoons fresh tarragon
  • 1 cup cashews, toasts
  • 9 cups spinach
  • black pepper, to taste
  • 1 teaspoon sugar

Preparation

Preheat the oven to 400 F.
Using a knife, cut the mandarin segments. Put the tangerines in a baking tray and bathe with 2 tablespoons of olive oil. Sprinkle 2 teaspoons of sugar, and 1/4 teaspoon of salt. Bake for 10 minutes to brown a little. Allow them to cool until they are at room temperature.
In a bowl, mix the vinegar, orange juice, tarragon, 1 tablespoon of sugar and 3/4 teaspoon of salt. Mix until the sugar dissolves. Gradually add the olive oil and stir with a balloon whisk until it thickens. Adjust salt and pepper to taste.
In another bowl, mix the Indian nuts with 1/4 teaspoon of salt.
Put the spinach in a salad bowl and add 1/4 teaspoon of salt and pepper. Put 1/3 of the vinaigrette on the spinach and stir well. The rest of the vinaigrette can be stored for another dish or served on the table.
Divide spinach on individual plates and place roasted mandarins and Indian nuts on top.
