Ingredients

8 portions
  • 375 grams Salmon
  • 1/2 cups shallot, chopped or chopped red onion
  • 1/2 cups chives, chopped
  • 3 tablespoons Dijon mustard, 2 spoons and 2 teaspoons
  • 3 tablespoons capers, 2 spoons and 2 teaspoons
  • white pepper
  • 2 beefsteak tomatoes, in slices
  • French lettuces, french
  • 3/4 cups sour cream
  • 1 package cream cheese, philadelphia
  • 1/3 cups capers, girls
  • 1 lemon, sliced
  • 8 saladet tomato flowers
  • metal rings, to make the circular form of presentation

Preparation

Put the salmon crumbled in a beater. Add the echallot or red onion, chives, mustard (2 tablespoons and 2 teaspoons), capers (2 tablespoons and 2 teaspoons) and season with white pepper. Stir well.
Beat the cream cheese, add the cream little by little until there is a pasty. Add the onion, the capers (1/3 cup) and season.
Wash and disinfect the lettuce, dry it and put the leaves in a serving dish. Place a metal ring on each leaf and put a slice of tomato on the bottom of the ring. Put the salmon (pressing a little), put the cream of cheese (passing a spatula to smooth) and decorate with a little tomato flower and sliced ​​lemon.

Accompany this dish with a Chardonnay wine.
