Preparation
Put the salmon crumbled in a beater. Add the echallot or red onion, chives, mustard (2 tablespoons and 2 teaspoons), capers (2 tablespoons and 2 teaspoons) and season with white pepper. Stir well.
Beat the cream cheese, add the cream little by little until there is a pasty. Add the onion, the capers (1/3 cup) and season.
Wash and disinfect the lettuce, dry it and put the leaves in a serving dish. Place a metal ring on each leaf and put a slice of tomato on the bottom of the ring. Put the salmon (pressing a little), put the cream of cheese (passing a spatula to smooth) and decorate with a little tomato flower and sliced lemon.
