This is a rich and healthy salad of edamames with granola. Perfect to take care of your health and that of your family. It is made with Granola Kellogg's® Ancestral Grains; Sunflower seeds, amaranth and raisins that gives a crispy texture. It is very easy and quick to prepare.

Ingredients

2 servings
  • 1 Cup of Granola Kellogg's® Ancestral Grains; Sunflower seeds, amaranth and raisins
  • 1/4 of Cup of canned chickpeas drained and rinsed
  • 1 1/2 cups of edamames
  • 1 1/2 cups of green apples
  • 1/4 of Cup of onion
  • 1/4 of Cup of feta cheese
  • 1 piece of avocado
  • 1 teaspoonful of ginger
  • 3 spoonfuls of lemon juice
  • 1 tablespoon of Apple vinager
  • 1/2 tablespoon of honey
  • 1 tablespoon of olive oil
  • 2 spoonfuls of fresh parsley previously washed and disinfected

    Preparation

    Boil water with salt and add the edamames and cook for 5 minutes. Once cooked, place them in cold water to stop cooking. Drain the edamames and remove them from the shell.
    Chop the apple in small cubes, file the onion and mix with the edamames. Add the chickpeas and feta cheese. Mix everything until it is well incorporated.
    Add the Ancestral Grain Granola; Sunflower seeds, amaranth and raisins and mix again.
    For the dressing: Place the pulp of the avocado and the peeled ginger in the blender. Add the rest of the ingredients and blend.
    Serve the salad along with the dressing.

    PRESENTATION

    Serve with the avocado dressing.

    Try to include cereals, vegetables and foods of animal origin in each of the meals of the day.
