A cactus salad will be a great complement to your meals, or a light but nutritious and practical lunch. This recipe for cactus salad is different from the usual one, because the ingredients go tatemados, that is, grilled in a comal, along with some Habanero chili peppers. Ingredients

4 portions
  • enough oil
  • 6 nopales
  • 4 habanero peppers
  • 1 cup black bean, cooked, without broth
  • 1 cup tomtato, finely chopped
  • 1 cup red onion, finely chopped
  • 1 cup cucumber, diced
  • 1/2 cups radish
  • 1/4 cups epazote, finely chopped
  • 1/4 cups lemon juice
  • 1/4 cups olive oil
  • 2 tablespoons vinegar
  • to taste salt
  • enough Double cream cheese, to decorate
  • enough pork rind, To accompany
  • enough tortilla chips, To accompany

Preparation

Heat a grill and varnish with oil; grill the cactus and habaneros on both sides. Then, on a board, cut the cactus and chop the chiles. Reservation.
In a bowl mix the beans, the tomato, the purple onion, the cucumber, the radish, the epazote, the cactus, the habanero pepper, the lemon juice, the olive oil, the vinegar and season with salt.
