Preparation
Cut the spinach, previously washed and disinfected, into medium pieces.
Peel the carrot and the beet. Cut them into thin strips. You can use a mandolin or a grater if you prefer.
Cut the rest of the vegetables into thin strips and arrange them on a plate.
For the dressing; Place the Yogurt FAGE Total® 0% in the blender and add the lemon juice, garlic, Parmesan cheese, Dijon mustard, capers and a little salt and pepper.
Still liquefying, add the olive oil. Pour the dressing into a jar and serve with the salad.
