A rich and refreshing jicama salad with lemon and cilantro dressing.

Ingredients

4 portions
  • 1 jicama, peeled
  • 1 red pepper
  • 1 yellow bell pepper
  • 1/4 cups lemon juice
  • 1/4 cups olive oil
  • 4 tablespoons fresh coriander, chopped
  • 1 cup pineapple, in squares
  • to taste black pepper, to taste

Preparation

Cut the jicama into small cubes.
Cut the peppers into small cubes too, having previously removed their seeds.
In a blender mix olive oil, lemon juice, cilantro, salt and pepper. Mix for 2-3 minutes.
In a large deep bowl, mix the jicama, pineapple, peppers and seasoning.

PRESENTATION

Pour the salad into a salad bowl and serve.
