Ingredients

6 portions
  • 1 egg
  • lemon juice
  • 3 tablespoons garlic
  • 1/2 teaspoons worcestershire sauce
  • 1/4 teaspoons Red pepper, or dry chili powder
  • 1 tablespoon Dijon mustard
  • 2 flat anchovies fillets, pureed
  • 1 cup olive oil
  • 1/4 cups parmesan cheese, freshly grated
  • black pepper
  • salt, to taste

Preparation

In a medium bowl, mix egg, lemon juice, garlic, Worcestershire sauce, dry chili powder, mustard and anchovies.
Slowly add the oil beating with a balloon whisk to emulsify.
Add the cheese and season with salt and pepper.

PRESENTATION

Serve the dressing over dried lettuce, and grated Parmesan cheese on top.

TIPS

It can be stored refrigerated for up to 10 weeks if stored in a well-covered container.
