You would never imagine how easy it is to prepare homemade mayonnaise with this recipe! We give you step by step how to make Homemade Spicy Mayonnaise that you can use as a dressing for some meals and the best thing is that the spicy flavor will give a very special touch to your dishes. Prepare sandwiches, tortas, grilled fish, chicken nuggets and serve with this delicious preparation. For this Homemade Spicy Mayonnaise you can add the dried chiles that we recommend, but if you want to make it with fresh chiles, a great option is to use jalapeño pepper or habanero chile. Ingredients

10 servings
  • 3 pieces of ancho chili pepper clean, seedless and deveined
  • 4 pieces of guajillo chili pepper clean, seedless and deveined
  • 5 pieces of morita chile pepper clean, seedless and deveined
  • 2 pieces of egg yolk
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 2 spoonfuls of mustard
  • 2 cups of vegetable oil
  • 2 spoonfuls of White vinegar
  • 1 tablespoon of lemon juice

    Preparation

    Preheat oven to 160 °C (320°F)
    For the chilli powder: On a tray, spread the chiles and bake for 5 minutes until the chilies release their aroma. Remove from the oven and when they are cold, blend to obtain fine powder.
    In a bowl beat the egg yolks with salt and pepper to your liking until they double their volume and change color.
    Add the mustard and continue beating, add the vegetable oil slowly in a stream, until the mayonnaise forms, add the white vinegar and the lemon juice while still beating. To finish add the chilli powder. Refrigerate.
    Serve the mayonnaise in a glass jar and use it for whatever you like.

    PRESENTATION

    Serve in a jar and accompany with sticks of celery and carrot.

    TIPS

    You can substitute vegetable oil for olive oil. Try no to burn the chiles while they are in the oven, as they could have a bitter taste.
